Established in 2006, Flat Earth Brewing produces a variety of artisan ales every month in Saint Paul. As the beers roll out of the brewery, you’re sure to see a theme develop around their names – a hint of conspiracy, perhaps. The names are meant to get people thinking and talking. Whether you enjoy Flat Earth beers at home or out with friends, there are no secrets when it comes to good beer.

Here’s a beer that begs for food. Deep ruby, leaning toward brown color with beautiful bright highlights. Lovely bouquet of roasted and sweet flavors. Round and full bodied on the palate, with a good balance of toast, seemingly less alcoholic than the 6.5 percent listed, along with OG – 1.065, IBU-35 and SRM -25. We relished it with smoked baby back ribs, my mama’s potato salad recipe and eggplant marinated in garlic and tomatoes.

Black and expansive as the galaxy. Fruity and cocoa roast aroma gracefully spirals to the senses. Elegant cocoa flavors along with smooth, triumphant malt sweetness. A pact with hops that don’t overwhelm, yet sustain balance in this universe. One sip summons another. There must be a black hole in this somewhere, causing an unmerciful attraction. Loaded with solemn and transfixing character any way you approach this great beer. Spiral me up, Scotty.
