Pouring as hazy as a Texas sunbeam on a dusty summer day, this wit gently greets you first with its appealing aromas of fresh oranges and coriander along with a slight bready quality and barely-there whiffs of clove and banana. The first sip brings similar flavors, adding lemon zest, along with a nice, fairly forward yet never intrusive spiciness that prickles in the mouth. A balanced effervescence helps carry the flavors and aromas in the beer. Brewed as a nod to Pierre Celis and his effort to revive the style, this wit is a fitting tribute.

A vigorous pour brings up a nice white foam over the straw-colored liquid. The aroma is bright, perhaps more lemony than orangey, with notes of black iron. On the palate, everything is in place—a brisk, soft bitterness, a bready-sweet center, and a drying finish with a tangy wheat sign-off. Importantly, this steers clear of the over-spicing that mars so many American witbiers. Nicely done. It could use a bit more carbonation, but that’s a quibble—your goat cheese salad won’t mind in the slightest.
