Two Saisons

Summer Saison

5 gallons, OG 1050
¾ lb dextrine malt for steeping
6 lb extra light dried malt extract
1 oz East Kent Goldings hops, 60 minutes
1 oz Styrian Goldings hops, 25 minutes
1 oz Saaz hops, 5 minutes

Optional: Add ¼ oz fresh ground white peppercorn and ¼ oz fresh ground coriander, and 1 oz fresh lemongrass with the aroma Saaz addition

Ferment with White Labs WLP565 Belgian Saison I or Wyeast 3711 French Saison yeast

For all-grain, replace the DME with 9 lb pilsner malt, reduce dextrine malt to ½ lb and mash at 150 degrees

Notes: Spices can be eliminated altogether, or up to a pound of very light honey can be added

Saison de Garde

5 gallons, OG 1065
10 lb pilsner malt
3 lb Vienna or Munich malt
Mash at 150 for one hour
1.5 oz Styrian Goldings hops, 60 minutes
1 oz Saaz hops, 20 minutes
1 oz Saaz hops, 5 minutes

Optional: Add ½ oz fresh ground coriander, ¼ oz fresh ground black peppercorns, 3 star anise and 1 tbsp fresh ginger

Ferment with White Labs Belgian Saison II or Wyeast 3724 Belgian saison yeast

For extract, use one pound of Caramunich I for steeping, and replace the grain with 6.6 lb light DME and 1.5 lb Munich or amber malt extract
