Flavor Training by Cicerone: A Seminar on Beer Production and Handling Off Flavors

This seminar will be held at the Taco Mac in Cary (309 Colonades Way) from 2-5 p.m. on Friday, April 1. Tickets, which are $50 and limited to just 65 people, can be purchased here. 

Join the Cicerone® Certification Program, in conjunction with All About Beer Magazine, for a 2 ½ hour educational seminar on beer production and handling off flavors. Pat Fahey and Virginia Thomas will introduce the group to Flavor Training by Cicerone, including tasting techniques, beer flavors and their sources, off flavor identification, and more. The hands-on class will include tasting of six commonly found off flavors (lightstruck, DMS, diacetyl, trans-2-nonenal, infection, and acetaldehyde), which are the six off flavors tested on the Certified Cicerone® exam.

Based in Chicago, Pat Fahey works for the Cicerone Certification Program managing exam content, developing educational material, and administering training across the nation. In addition to working for the Cicerone Certification Program, Pat splits time between participating on tasting panels for the Beverage Tasting Institute and consulting privately. In May of 2013, he passed the Master Cicerone® exam, becoming one of 11 Master Cicerones in the world, and the youngest to ever pass the exam.

With a background in business management, Virginia Thomas drives all business aspects of the Cicerone Certification program. In this position she participates in intensive palate training, helps to develop multiple written and in-person educational offerings, and plans exams and events. Aside from the founder, Ray Daniels, Virginia is the longest tenured employee of the program, a Certified Cicerone, and member of the Pink Boots Society.
