Head distiller Rob Arnold did something very crafty: He found and cultivated wild yeast strains for fermentation. The winner was on a pecan tree, very Texas indeed. It gives a definite floral nose; also cinnamon stick, old cloves, dried apricot and uncut honeydew. TX is a wheated bourbon, made from local grain: corn and soft red winter wheat. Spicy sweetness in the center, but overall this is a fairly lean whiskey, with a warm, oak-tingly finish. Quite nice!
