    Talk about turbid, like spun gold, you can almost bite into it. I love the nose, so lambic, so sensual, almost sexual! It’s the wild yeast doing its own thing. Initial mouthfeel is acidic, but complexity and balance quickly come to the rescue, making it hard to put down. The more you taste, the more you discover. Perhaps better by itself or with nuts, fruits and cheese than most main courses, we drank it with truffled flatbread, and cheeses that themselves had complex barnyard flavors, like Petite Muenster, Pont l’Évêque and Herve.

    This is a keeper, literally. In the classic and traditional style of lambic, this one is a lightly carbonated gift from the brewery for you. Super-wonderful classic Belgian pale lambic with all the balanced characters of wild fermentation along with a tiny hint of French oak. Sourness is certainly accented, but there are so many other complex flavors and aromas, it keeps you wondering while you go back for another sip and another and another. Well done, brewmaster, whoever you are. Should we meet, I will offer a toast to your continued success.
