Longmont, CO – Oskar Blues’ continues to integrate their restaurant roots and their boundary bustin’ brewery with their latest fast-craft-casual concept CHUBurger.
“CHUBurger’s inspiration is to serve the best and freshest locally raised and thoughtfully sourced food and craft beer. And make it fast and affordable,’” says Chef Jason Rogers.
“Our vision is to raise our own all-natural, grass fed, 100% Black Angus beef and improve the idea of farm to table.” says Rogers. The Hops & Heifers farm is a conscious venture that was inspired by Oskar Blues to integrate brewery outflows of spent grain, a potent protein mash, along with all-natural grass and hay and to create a local, fresh plate.
The menu will also feature fresh cut Kennebec potato fries, plain or in combination with roasted shoshito peppers, a fresh and spicy twist. If Hops & Heifers beef isn’t your thing, the BUFFburger made with fresh all natural local bison, OMEGAburger sustainable wild Coho salmon with Greek yogurt tartar sauce, or the BERKburger, the Hops and Heifers newest addition to the farm, heritage Berkshire pork.
Plus the menu will include one-of-a-kind milk shakes and our unapologetic canned beers (naturally).
For the super-creamy milk shakes, the restaurant will use a Pacojet, a new device that creates an ultra-light mousse.
“The Pacoject is a revolutionary ‘bucket list’ product that hasn’t been offered at this level of food service ever—a must try before you die,” Rogers quips.
The CHUBurger restaurant will open its doors on February 1, 2013, at 1225 Ken Pratt Boulevard, just a mile down the road from the brewery and its Oskar Blues Homemade Liquids and Solids restaurant which are only eight miles from their Hops & Heifers Farm. CHUBurger’s hours will be daily from 11:00 a.m. until 10:00 p.m., and will offer take-out, catering and outdoor seating.
CHUBurger is designed by Trapp Associates Ltd., an international, multi discipline design firm specializing in restaurant / retail design, brewery design, restaurant architecture, and equipment.
In addition to Oskar Blues Homemade Liquids and Solids, the craft brewery also owns the original Oskar Blues Grill & Brew and The Old Chubway, both in Lyons, as well as the Bonewagon, a food truck that offers the original CHUBurger from its stops in the Longmont and Boulder area.
