Firestone Walker Brewing Co. Parabola Imperial Stout 2010

This imperial stout from Firestone Walker Brewing Co. pours dark black with a tan head that quickly dissapates. Strong bourbon, oak and vanilla aromas come off the top. Clearly this is a beer that screams, “I am barrel aged!” Parabola is part of the brewery’s Proprietors Reserve Series. The beer is aged in bourbon, wine and beer barrels for 9 months.  It has a smooth, silky mouthfeel with little carbonation if not mostly absent. Notes of cherry, chocolate and dried fruits. A sherry-like finish avoids the dryness sometimes associated with imperial stouts. A boozy, chewy candy of a beer – think Raisinets. Pair with a Cuban cigar or locally-made blue cheese. An awesome beer. Too bad I only had one bottle of it…
