There is a distinct pattern of aging as one moves through these three years. The beer generally softens from a robust, mouthy texture to something bordering on silk. The alcohol heat slowly dissolves over time leaving behind all the heat by 2014. The peppery notes also completely vanish after two years. Early hints of tobacco and leather gradually give way to smoke, while the head shifts from creamy colored to more coffee in color. Some dried plum and fig notes begin to show up in the second year. The chocolate itself begins with a nice bittersweet dark chocolate which three years later settles into a comfortable milk chocolate. This frisky Imperial stout definitely settles down over the years introducing more nuances with age.
