Brothers Adam, Jason and Tyler Shifflett opened the brewery in a renovated soda bottling plant in December of 2012. Brewed specifically for barrel aging, Resolute is a Russian imperial stout aged in bourbon barrels for 10 months.

A mouthful in every sense: a bourbon barrel-aged Russian imperial stout. It’s as black as Hades with a cappuccino-colored head and an aroma so complex you could write a book about it. It has espresso, bitter chocolate, oak, smoke, whiskey and vanilla for starters. The palate offers creamy malt, burnt fruits and continuing notes of whiskey, oak, coffee and chocolate. Peppery hops build in the finish with a firm underscore of creamy malt, a pronounced whiskey note, oak and vanilla.

At first I thought the beer was flat, but then the carbonation finally struggled free of the tar-black liquid and swam its way up to form a nice tan cap. The nose is a nice mélange of American oak, chocolate and coffee, with pleasant notes of coconut and vanilla. An alcohol aroma floats over it all, grappalike. The palate is semisweet and smooth, showing flavors of caramel, dark fruit and tobacco shop. It’s chest-warming, but carries it off. This is an after-dinner drink, especially with chocolate cake. #icecreamfloats
