Oxford Organic is a new line from Baltimore’s Clipper City Brewing Co. The company is named for the Clipper ship that was first developed and built in the port of Baltimore.

Bright amber color, tending toward brown. Tan head makes a luxurious visual contrast. Slightly thin on the palate with a faint hop acidity that makes this a better beer to accompany food than by itself. We served it with brown butter polenta with fiddlehead ferns, spring peas & a rich cream sauce that married well with the beer’s acidity.

The neck label took the thought right out of my head, that the malt-accented Oxford Class seems perfectly suited for turning organic — although I expect the always popular Raspberry Wheat may end up being the Oxford Organic star. Pleasantly fruity at the outset, soft caramel flavors emerging in the mouth, the sweetness bouncing off proper and drying bitterness. Subtle in a way that has me wondering what it might taste like alive on cask.
