La Socarrada

At the turn of the 18th century, the town of Xátiva was razed to the ground and kept aflame for eight days by King Felipe V. However, the survivors thrived, rebuilding Xátiva, and to this day are referred to as the “socarrats” (burned). La Socarrada is a golden ale brewed with rosemary and rosemary honey.

This properly handled, unfiltered, bottle-conditioned brew gushed when the crown was cracked, making this artisanal Spanish brew even more precious. Turbid spun-gold color and a long-lasting head of bubbles are a great contrast. Beautiful “mantillas” lace remains on the glass. Aromatic nose is distinct, herbal and sweet. Luscious palate is round and finely balanced, full of complex flavors of rosemary and honey, yet dry and complementary to food. Serve with rack of lamb with roasted new potatoes, both sprinkled with Rosemary from the herb garden.

Powerfully comforting rosemary aromas immediately impact the senses. Yeast-induced haze does not detract from supple and lasting head. Rosemary, Rosemary, why not so contrary? How does your beer ferment? Lowly perceived bitterness is quite in balance with high-profile rosemary flavors and aromas. An interesting beer to pair with certain food. Lamb, cheese, roasted vegetables. Dances on the palate. Artfully brewed. A nice thirst quencher, apéritif, meal enhancer. Or Just Drink It. Applause due brewer.
