Hop Slayer

September 12, 2014
Reviewers:Charles Finkel - Charlie Papazian

Hop SlayerHop Slayer

Wild Onion Brewery

Lake Barrington, IL

Hop Slayer is brewed with English and North American pale malt along with Caramel Pils for the malt body and five hop varieties from the Pacific Northwest.

ABV: 8.2

ABW: 6.5

COLOR: 6

IBU: 99

OG: 1083

Available: IA, IL, MO, NE, NJ, NY

Excellent IPA color, solid almost bright amber with gold at the edges, topped with a quickly receding bone-colored head. The fulsome aroma shouts hops, vegetative, floral and herbaceous. There is a pleasant bitterness on the palate nicely nuanced by a complementary malt bill that supplies ample sweet balance! As an aperitif, it finishes clean with hops that hang on and on to the roof of your mouth calling for food. Delicious! We enjoyed it with spicy watermelon gazpacho, roasted poblano peppers stuffed with onions, homemade mozzarella, fresh corn seasoned with lime pickle and sesame and sea salt breadsticks.
- Charles Finkel
Bold fruitiness reminiscent of banana and spices. Hop-hazed amber ale with plenty of malt, alcohol and hop character to slay your palate. Initial hop assault is assertive, but trails off and leaves me with a sense of yearning for the palate reaction that lingers. It’s a slayer all right! But you come out reborn for the experience. Life is good, and so is Hop Slayer.
