Evolver IPA is brewed with Chinook, Summit, Magnum, Herkules, Sorachi Ace and Centennial hops. It is fermented only with Brettanomyces.

Unlike a Belgian lambic brewer who will use old hops with little or no bitterness, Wild Beer has packed a large amount of fresh hops into a conventional pale ale but then ferments the beer solely with the wild yeast strain Brettanomyces. The straw-colored beer has a minty/herbal aroma with a powerful blast of peppery hops, ripe bananas and sour cream. There’s an uncompromising “Brut Champagne” acidity in the sour, with bitter hops adding balance along with tart lemon and lime fruit. The finish is intensely acidic with continuing notes of tangy fruit, toasted grain and bitter hops.

This beer changes character over time—hence the name. It’s a pale ale at heart but, as age allows the influence of Brett to take hold, a kind of Orval tribute results, except with a deeper wild yeast experience. The beer is tart and fruity throughout, with rhubarb in the aroma and bitter citrus in the taste, but at all times the earthy, bone-dryness of Brett is in evidence, running on into the notably bitter, acidic finish in which tangy hop notes linger. Freshness and lots of carbonation aid the drinkability. A good, sharp refresher.
