EOS Hefeweizen started as a homebrewing recipe that Nebraska Brewing founder Paul Kavulak started brewing in 1993. EOS is the Goddess of Dawn and is also the name of the computer system Kavulak worked on while developing this beer.

Deep golden color has real depth. Alas, the head disappeared as soon as it was poured. The nose can be described as liquid sunshine, fruity like Bavarian weissbier, but without so much bubble gum character and as a result, an excellent accompaniment to dinner. Nice balance of malt and yeast leaves a warm long and sensual aftertaste. Delicious with lobster bisque, sole meunière, onions braised in the hefeweizen, and apple pie topped with vanilla gelato.

“South German-style Hefeweizen” proclamation lends itself to high and specific expectations. Slight yeast haze, gentle head retention. Banana and mild smoky aroma characters nail expectations. Flavors contribute mild phenolic character along with banana and smoky—all derived from yeast fermentation. Low yet evident hop bitterness. Complex but moderate and balanced. Chewy mouthfeel. I look up from my glass and see the Alps on the southern horizon. Clean aftertaste with “come-on” of desire. A worthy beer.
