After fermentation, this ale is racked into Jack Daniel’s barrels and spiked with French roasted coffee from Mello Joy. After four months, the selected barrels were racked onto and aged on locally grown organic Chile d’arbols from Pimmo’s Peppers and cacao nibs.

Deep, almost opaque coffee color displays reddish highlights when held to the light. Contrasting head disappears quickly. Wondrous nose is mocha, chocolate, coffee, tobacco, leather, spice and molasses all rolled into one. Palate is spicy and tingling on the tongue. The flavors are complex, luscious, well-balanced and delicious with coffee and chocolate leading the way. Great with Southern barbecue smothered in sauce and served with sweet potato pie après.

This beer screams “Yum!” It sets you up with luscious head of foam atop a beautifully dark beneath. Complex flavors emanate from bayou country. Roasted coffee, oak barrel complexity; is that cocoa or is that roast malt? Just when you think the mystery begins to reveal itself, the warmth of chili tickles the backside; or is that friendly alcohol? So much going on here, but it is the sum of all its parts and the heritage of the bayou that brings my mind to the forth, tackling all that greatness. But who really cares that my mind is kicked into creative gear—this beer is in a word “wonderful.”
