The three Floyds of the name are brothers Nick and Simon and their father, Mike Floyd, who founded the brewery in 1996. Apocalypse Cow is a double India pale ale made with lactose.

A double IPA made with the addition of lactose or milk sugar. The beer has a deep burnished bronze color with a massive hit of citrus fruit on the nose along with raspberries, nougat and a touch of fresh tobacco. Velvety-smooth and creamy malt dominates the palate and is complemented by spicy hops and tart tangerine fruit. The finish has smooth malt, a returning hint of nougat and gentle, spicy hops. It ends bittersweet. A fascinating and refreshing interpretation of India pale ale.

The label is fearsome, but the beer looks normal, a lucid pale honey-colored stream pouring thickly into the glass. The aroma is intense—bowls of oranges, pine needles and candy canes, not unlike Christmas morning. The sweet-bitter attack comes as a shock, but an interesting one. The oily, round beer drops plenty of sugar and a boatload of bitterness on the tongue at the same time, feigning sweetness at the finish, but finally flicking a cutting tail. This beer has personality to spare. It might get cloying in a pint glass, but it’ll be the bomb with a lamb vindaloo.
