Tom Shellhammer

In the latest episode of the Beervana podcast, Jeff Alworth and Patrick Emerson visit with Tom Shellhammer, Nor’Wester Professor of Fermentation Science at Oregon State University. Shellhammer directs the brewing education component of the program, and is one of the world’s leading hop researchers.

Shellhammer discusses the flavor and aroma compounds in hops, how he and his students at OSU study hops and how they test them both in labs and in practice. In this podcast, they visited Shellhammer in his office. Check back for part two, when they visit with Shellhammer in the pilot brewery to dive even deeper into hops. They will also speak with Jeff Clawson, the pilot brewery manager.
