The monks claim it’s the only Trappist wheat—“witte”—beer in the world. It’s a blend of malted barley and wheat, has an inviting pale gold color and a superb aroma of creamy malt and perfumed hops, with a hint of nougat. The palate is sharp and tangy—it’s quite a bitter beer for the style—but smooth, creamy malt builds with a continuing note of nougat. The finish is spritzy, with hop notes, rich malt and a late burst of a sweet, honey note. Complex, refreshing and rewarding.

Sometimes a beer really hits the spot, and this Dutch witbier did that for me. In this age of big-tasting brews, subtlety and refinement are qualities that are all too often overlooked. This hazy yellow beer offers everything you’d expect from the style—from a creamy, bready texture to hints of peppery spice and plenty of tart fruit, in this case apple and lemon—but it’s all done in a balanced and restrained fashion, leaving you room to unravel more levels of flavor with every sip. It’s clean, fresh-tasting and wonderfully delicate. A treat.
