Deschutes Inversion IPA

Dense, silky head; well-made lace; deep tamarind color. A dryish aroma. Slightly smoky, oily, leafy aroma reminiscent of thick-cut orange marmalade. Remarkably lively for a beer that is so big all round. Firm body, lean and rounded. Hints of bitter cocoa and treacle toffee, but dominated by the hop. Intensely dry, bitter finish.

“I” candy! New penny-bright copper with strong golden highlights, topped by a gorgeous creamy head that hangs on and on, finally leaving lovely lace. Aromatic but gentle hops in the nose, nice balance of evergreen and citrus and tropical spice with a solid malty backbone on the tongue. Quite dry, would be especially good with a meal. We paired it with a trio of tuna tartar: avocado, papaya, and cucumber; smoked black cod in a sweet and sour sauce followed by an apple and Beecher’s cheese. We were glad the brewery sent three samples.

Clearly a different personality and structure than Quail Springs IPA, the beer it replaced. Inversion — the mountain phenomenon where it's cloudy at ground level and becomes clear as you climb — seems a particularly appropriate name. It begins in a cloudy swirl of hop aromas, then finds focus in a firm middle and long bitter-dry finish. That focus is Northwest hops. Its nose showcases citrus (zesty fresh orange), pine, peach-mango-apricot dreamsicle, and wet hay... for starters. Solid biscuity malt and obvious alcohol hold their own against bracing bitterness.
