After racking out I'll strain it then bag up the nibs and tie it up in the kegs while it conditions for a couple weeks and my Black IPA's come out rockin' !!! I work for www.cocoasupply.com, thanks for the mention! We really want to work with more microbrewers and home brewers and we have all of the chocolate products you mentioned in the article. We also have a new sister-site to cocoasupply.com called www.ingredient-supply.com. It has all the same products plus some new ones and a more user friendly interface. Awesome post. FYI, cocoa powder is actually made by removing about 60-80% 0f the fat from cocoa liquor. This is done by pressing, wherein cocoa butter flows out. The resulting press cake is ground to make cocoa powder. K- Nice write-up. FYI, cocoa powder is actually made by removing about 60-80% 0f the fat from cocoa liquor.
